For some people, the idea of making a roast or a large piece of meat can be a daunting task. It seems like many have a fear of ruining their potentially expensive cut. A roast is the type of thing that once you have learned a few tricks of the trade, making meat can be as easy as 1-2-3.
This is a brisket that I have been making for many years. It is a great recipe to start with if you are not yet comfortable with slow-cooked meat. The low-and-slow cooking method results in deep flavours and melt-in-your-mouth texture.

INGREDIENTS
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1/4 cup dried onion flakes
1 tsp paprika
1 4 to 5 lb. brisket
3 tbsp deli mustard
3 tbsp old-fashioned mustard
1/4 cup extra-virgin olive oil
3 onions, sliced
INSTRUCTIONS
1. Preheat oven to 425 F.
2. Combine salt, pepper, garlic powder, onion flakes and paprika in a small bowl.
3. Rub spice mixture over brisket.
4. Let brisket sit for 30 to 40 minutes at room temperature.
5. In a small bowl, combine both mustards, oil and onions. Coat the brisket well.
6. Bake for 25 minutes in a roasting pan, then reduce heat to 300 F and continue baking for another 3 hours or until brisket is thoroughly cooked.
