When it comes to breakfast we all have our go-to's, but let's be honest, the same ol’, same ol’ can get kind of boring.

So we spoke to Chef Ashley Breneman with Certified Angus Beef Brand to learn how to switch up your breakfast routine with something you typically associated with dinner: beef!

Instead of bacon and pancakes, how does a beef sausage sandwich sound?

She starts by making the sausage adding salt, pepper, granulated onion, granulated garlic, nutmeg and sage to ground Certified Angus beef to give it a very "breakfasty" taste. Mix that all together and roll them into 4 oz balls and let it sit in the fridge for at least an hour so the flavors can marinate together.

What really makes this recipe stand out is her cooking technique for the sausage. You will want a screaming hot cast iron pan, and when you but the sausage balls in the pan you will want to smash them down with a spatula to make them thin, and get a nice crust on the patty. After a couple of minutes it should be seared and ready to flip over. You will want to cook these to an internal temp of 155 degrees.

The other key to this meal is a really fluffy scrambled egg. To do this, you will want to add a little bit of milk to your eggs, and really move them around in the pan to fluff them up. Once they are cooked, cover them with cheese and place a lid over the pan so the cheese can melt on its own.

Then you build the sandwich with your finished sausage, eggs, cheese, and biscuits. You can even add hot sauce to it if you’d like.
